This is the closest I have come to homemade pudding in five years! I've found that if I soften the cocowhip until nearly liquid and THEN measure it out, the result is the creamiest pudding. Warning: it is seriously sugary. I can't eat much in one sitting. But I cannot WAIT to try it in a pie!
