Gingerbread Waffles

Preparation time: 10 minutes Cooking time: 10 minutes Makes/Serves: 8

Ingredients

2 cups sifted flour

3/4 tsp baking soda

1/2 tsp salt

2 tsp ground ginger

2 eggs, separated

1 cup molasses

1/3 cup shortening, melted

1/2 cup sour milk or buttermilk

Method

Mix and sift dry ingredients

Combine well-beaten egg yolks and molasses. Add the flour mixture alternatively with sour milk, beating until smooth.

Add shortening and fold in stiffly beaten egg whites.

Bake in hot waffle iron, removing tender waffle from iron in quarters.

Serve hot with applesauce and bacon, or serve as a dessert with whipped cream flavored with molasses

A/N

If you don’t have shortening, just use butter or margarine. It’s a 1:1 ratio, so 1/3 cup of butter in this case.
