These vegan gingerbread sandwich cookies are a tasty treat that's great for holiday parties or any time you want a sweet and spicy snack. The cookie is rich and flavorful thanks to the molasses, spices, and maple syrup that are mixed together. The creamy vanilla filling makes it extra delicious.
Ingredients: 2 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/3 cup molasses. 1/3 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/2 cup powdered sugar, for dusting. 1/2 cup vegan butter, softened. 1 cup powdered sugar, for filling. 1 teaspoon vanilla extract, for filling.
Instructions: Preheat the oven to 350F 175C and line two baking sheets with parchment paper. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves. In another bowl, mix molasses, maple syrup, melted coconut oil, and vanilla extract until well combined. Gradually add dry ingredients to wet ingredients, mixing until a dough forms. Roll out dough on a floured surface to about 1/4-inch thickness. Use cookie cutters to cut out shapes. Place cookies on prepared baking sheets and bake for 8-10 minutes, or until edges are set. Remove from oven and let cool completely on wire racks. Meanwhile, prepare the filling by beating vegan butter, powdered sugar, and vanilla extract until creamy. Once cookies are cooled, spread filling onto half of the cookies and sandwich with remaining cookies. Dust the tops of the cookies with powdered sugar before serving.
