Ingredients: 1 cup butter, softened. 1 cup white sugar. 1/4 cup molasses. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 teaspoon ground ginger. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 cup crystallized ginger, finely chopped. 1/4 cup granulated sugar for rolling.
Instructions: Preheat the oven to 350F 175C. In a large bowl, cream together the softened butter and 1 cup of white sugar until smooth. Stir in the molasses. In a separate bowl, whisk together the flour, baking soda, salt, ground ginger, ground cinnamon, ground cloves, and ground nutmeg. Gradually add the dry ingredient mixture to the wet ingredients, mixing well after each addition. Fold in the finely chopped crystallized ginger. Shape the dough into small balls, about 1 inch in diameter. Roll each ball in granulated sugar to coat. Place the coated dough balls on a baking sheet, leaving space between each for spreading. Bake in the preheated oven for 10-12 minutes, or until the cookies are set and slightly golden around the edges. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
