Savor the amazing flavors of grilled lobster tails that are complemented by a vibrant ginger-lime beurre blanc sauce. This opulent dish gets a unique twist from the smoky infusion, which makes it ideal for special occasions or a fun weekend treat.
Ingredients: 4 lobster tails. 1/2 cup unsalted butter, melted. 2 cloves garlic, minced. 1 tablespoon fresh ginger, grated. 2 tablespoons fresh lime juice. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Set the temperature of your smoker to 375F 190C. Cut the top side of each lobster tail shell lengthwise with kitchen shears so that the shell stays intact but the meat is visible. Combine grated ginger, minced garlic, melted butter, and lime juice in a bowl. To taste, add salt and pepper for seasoning. Make sure to evenly coat the lobster tails by generously brushing them with the ginger-lime butter mixture. After the smoker grates are heated, place the lobster tails on them and shut the lid. Baste the lobster tails with the butter mixture halfway through the smoking time, and continue smoking for about 15 to 20 minutes, or until the meat is opaque and cooked through. After taking the lobster tails out of the smoker, add some freshly chopped parsley as a garnish, and serve right away with extra ginger-lime beurre blanc on the side.
