The Crispy Tofu Sandwiches with Ginger Peanut Sauce are a great mix of tastes. The tofu is just the right amount of crispy on the outside and soft on the inside. The creamy and slightly spicy peanut sauce goes well with it. This sandwich is a healthy and filling meal. The fresh vegetables give it color and crunch.
Ingredients: 8 slices of firm tofu. 1/4 cup soy sauce. 1 tablespoon sesame oil. 1 tablespoon cornstarch. 1/2 cup peanut butter. 2 tablespoons rice vinegar. 1 tablespoon maple syrup. 1 tablespoon grated ginger. 4 burger buns. 2 cups shredded lettuce. 1 cucumber, thinly sliced. 1 carrot, shredded. Sriracha sauce optional.
Instructions: To get rid of extra water, press the tofu between two paper towels. Soy sauce and sesame oil should be mixed together in a shallow dish. First, dip the tofu slices in the soy sauce mix. Then, use cornstarch to cover them. Put oil in a pan and heat it over medium-high heat. About 3 minutes on each side if you want the tofu slices to get crispy. Put peanut butter, rice vinegar, maple syrup, and grated ginger in a small bowl. Mix them together to make the sauce. Toast the burger buns if you want to. On one side of each bun, put peanut sauce. On the bottom buns, put slices of crispy tofu. Place slices of cucumber, shredded carrot, and shredded lettuce on top of the tofu. If you want, drizzle with Sriracha sauce. Add the top buns to the sandwiches to close them up, and serve right away.
