Grilled Salmon with Edamame Salad & Ginger Soy Dressing Serves 3-4 Ingredients: (Salmon Marinade) Salmon fillet, rubbed with salt, pepper and garlic powder 1/4 cup light soy sauce 1/4 cup water 1/4 cup vegetable oil 1/4 cup sugar (Salad) 2-3 large handfuls of lettuce, torn 2 radishes, thinly sliced 1 red onion, thinly sliced 1 cup shelled edamame, cooked (Dressing) 2 tbsp sesame oil 2 tbsp light soy sauce 2 tbsp rice wine vinegar 1 tbsp sugar or honey 1 tbsp ginger, grated Method: Mix the 1/4 cup of soy sauce, water, veg oil and sugar. Stir until sugar dissolves. Turn salmon in marinade to coat and let in sit in marinade in the refrigerator for 2 hrs. Put the fresh salad items into a bowl. Combine the dressing items in a jar. Seal tight and shake well to emulsify. Dress to taste and toss well. Heat the grill of your oven or barbecue to moderate heat. Remove the salmon from the marinade and place with the flesh towards the heat source (ie. Face up in a top grill oven). Discard marinade (or save it for a chicken night!) cook salmon for 4 mins, the flip and cook another 4 mins until skin is crisp and fish is flaky. Voilà!
