The fandom/fics list in ffnet and ao3 is already so small so imma list here the works that I constantly go back to mainly because their characterization is smth that I take reference from.

-futurefic (tho im not sure how far in the future). Gintoki and Otae gets to stay at a proper ryokan, just the two of them. Hurt/Comfort and Gen. Very touching fic about Otae seeing Gintoki's scars properly for the first time.
There are a lot more good fics in our small niche in gintama fandom tbh. I'm just gonna start you with these six coz i think a lot abt them. There are good au fics and Otae badassery fics which I haven't mentioned. If you wanna be more specific about the type of gintae u want then maybe i can help.
That being said I'd like to promote this GinTae 10 years later futurefic series that is still a massive work in progress of character studies. It revolves around the question "What will Gintoki do if Otae proposes marriage to him but not romantically?" It is called:

it's already around 15 chapters. Loosely based on Edo Period customs too. I'm still new to this sort of thing so it may read a bit awkward at some points but I poured quite a bit of my Otae research (and love) into the writing.
