The Dibba Bay Oyster Oysters from the Desert! Dibba Oyster farm is located 1.5 hours from Dubai - through sand, scrub brush, herds of camel and goat and through Limestone mountains reminiscent of Tatooine - on the Gulf of Oman. 25°36’22”N 56°19’27”E - one would never think… THIS is a great place to set up an Oyster Farm. Well, in 2016, owner/farmer/Entrepreneur Ramie Murray did just that. The Nutrient dense waters come off with a turquoise aquamarine green hue thick with phytoplankton, and still clear to bottom in the marina. The Dibba Marine biologist has identifies over 40 types of plankton that the oysters are constantly feeding on over their 9 month stay at the farm. The Magallana gigas seed is of French origin, Triploid to avoid spawning and thus the Oyster builds meat and shell. Grown in lantern nets - 15-30m in depth - adjusted to avoid warmer waters through the season, there are therefore subtle seasonal differences in taste and texture - Winter and Summer Tasting notes: Plump, crisp first bite, with larger than expected adductor. Delightful frilly ruffle of the mantle, exposing gills upon first shucking. Medium warm salinity (Ramie likes to adjust this seasoning to 28ppm from 34+ in the UV depuration tanks) to open the palate. Mineral and that SeaGreen plankton showing with a sweetness, and light velvety butter within. Very clean sweet greens finish that begs for a second oyster to chase… The Dibba Bay Oyster Bars are built from upcycled SeaCans (Containers) both located on water, and dining al fresco - the only any to enjoy the Oyster.
