Golden Lentil Daal - red bell pepper, chopped - green bell pepper, chopped - small white onion, chopped - 1/2 red onion, chopped - 1 Tbs ginger, minced - 5 cloves garlic, minced - 1 carrot, chopped finely - 16 oz red lentils - 6 cups water - 2 cups spinach, roughly chopped - 3 spring onions, halved lengthwise and chopped - 1/2 Tbs turmeric - 1/2 Tbs cumin - 1/2 Tbs garam masala powder (or curry powder) - 2 tsp chili flakes (optional) Sauté peppers, onions, carrots, ginger, carrots, and garlic in a large pot. Keep enough water in the pan so that your veggies don't burn. When they are soft add all the spices and stir. Add the lentils and water and bring to a boil. Once boiling cover and reduce to a low simmer for 30 minutes. Then add spinach and spring onions. I ate mine with jasmine rice. (Recipe adapted from high carb hannah)
