These pumpkin pie bites are a delicious and healthy dessert option for Thanksgiving. They are gluten-free, grain-free, and paleo-friendly!
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup pumpkin puree. 1/4 cup coconut oil, melted. 2 tablespoons maple syrup or keto-friendly sweetener. 1 teaspoon pumpkin pie spice. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, pumpkin puree, melted coconut oil, maple syrup, pumpkin pie spice, vanilla extract, and salt. Mix until well combined and a dough forms. Scoop out small portions of the dough and roll into balls. Place them on a baking sheet lined with parchment paper. Using a fork, gently press down on each ball to flatten slightly. Bake for 10-12 minutes or until golden brown. Let cool before serving.
