These nachos don't contain gluten and are very tasty. They're great for parties or a cozy night in. The fact that you can change them to suit your tastes and dietary needs makes them a hit with everyone!
Ingredients: 1 bag gluten-free tortilla chips. 1 cup cooked black beans. 1 cup shredded cheese use dairy-free cheese for vegan option. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup sliced black olives. 1/4 cup chopped fresh cilantro. 1 avocado, diced. 1/4 cup salsa. 1/4 cup sour cream use dairy-free sour cream for vegan option. Lime wedges, for serving.
Instructions: Preheat oven to 350F 175C. Arrange tortilla chips on a baking sheet lined with parchment paper. Evenly distribute cooked black beans and shredded cheese over the chips. Sprinkle diced tomatoes, red onion, and black olives over the chips. Bake in the preheated oven for 10-12 minutes, or until cheese is melted and bubbly. Remove from oven and sprinkle chopped cilantro and diced avocado over the nachos. Drizzle salsa and sour cream over the top. Serve immediately with lime wedges.
