A simple and flavorful dish featuring green beans sautéed in a shallot-infused olive oil, topped with crispy golden shallots.
Ingredients: 1 lb green beans, trimmed. 2 large shallots, thinly sliced. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: After blanching for two to three minutes in boiling water, the green beans should be vivid green and just slightly soft. To cease cooking, drain and immediately place in an ice bath. Heat the olive oil in a big skillet over medium heat. Add the sliced shallots and cook for 34 minutes, or until they are crisp and golden brown. After taking them out of the skillet, set them aside. Transfer the blanched green beans to the same skillet. Saute for 2 to 3 minutes, tossing to coat in oil infused with shallots. To taste, add salt and pepper to the green beans. Simmer for 2 more minutes, or until the beans are soft but still colorful. After transferring the green beans to a serving platter, sprinkle the crunchy shallots on top. Enjoy and serve right away!
