Bake Club: Vanilla Extract
Has anyone else notice how expensive vanilla extract is? The price keeps rising because of how labour intensive it is to grow them and how rare they are. 80% of the worlds supply comes from Madagascar. I spend – roughly on average – $204 for twelve cups of pure vanilla extract. I think I go through about one and a half cups a year. This year is a bit more because of the pandemic but maybe it is…

What does it take for me to be one of Ina Garten’s gay friends? Do I need to become a floral arranger? Buy a nicer sweater? Someone send me an application.
Carrot cake
I made a carrot cake for the ‘real meal’ at church last week. It’s a monthly dinner the church puts on for community members, a chance to feed the elderly or lonely. I’ve been meaning to attend since Paul preached about engaging with members of your community who aren’t of your socioeconomic class or gender or political party. I really believe that the point of church is to bring together these disparate groups and focus their efforts on Gods work. I also just wanted an outlet for my baking.
After the meal I was paid the highest compliment by a woman who said "you use real vanilla. I can tell." This was magic. I felt so pleased that I had made a cake everyone liked and especially for people who can taste the difference. It's always worth putting in the good stuff.
For dessert, I’m making my favorite Strawberry Country Cake, which is a simple sour cream cake flavored with good vanilla...
Ina Garten | Stashing the GREAT vanilla for herself
Yeah, real vanilla beans are worth it. So worth it. Like, one-of-the-most-exotic-flavors-on-the-planet, reaffirms-your-faith-in-the-majesty-of-creation-worth-it. Real vanilla is as sweet as honeysuckle, piquant as black pepper, floral and seductive as the most musky cantaloupe. Most of this flavor can be attributed to the chemical vanillin, which tastes like what we think of when we think of vanilla. (It can also be found in wood pulp, which is used to make dirt-cheap imitation vanilla extract.) But vanilla has over 250 flavor compounds beyond vanillin, lending it an astounding complexity.
