Ingredients: 1 cup gluten-free all-purpose flour. 1/2 cup gluten-free graham cracker crumbs. 1/2 cup unsalted butter or dairy-free alternative, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 large egg. 1 teaspoon pure vanilla extract. 1/2 teaspoon baking soda. 1/2 teaspoon xanthan gum if not included in your flour mix. 1/2 cup gluten-free chocolate chips. 1/2 cup mini marshmallows. 1/4 cup chopped gluten-free chocolate or chocolate chunks. 1/4 cup crushed gluten-free graham crackers.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined. In a separate bowl, whisk together the gluten-free all-purpose flour, graham cracker crumbs, baking soda, and xanthan gum if needed. Gradually add the dry ingredients to the wet mixture, mixing until a cookie dough forms. Fold in the gluten-free chocolate chips, mini marshmallows, chopped chocolate, and crushed graham crackers. Drop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the marshmallows are lightly toasted.
