This easy and filling Paleo Pork Stew makes the ideal comfort dish. Tender pork chunks, veggies, and flavorful herbs abound in this dish. It's also Paleo-friendly and free of grains!
Ingredients: 2 lbs boneless pork shoulder, cut into 1-inch cubes. 2 carrots, peeled and chopped. 2 celery stalks, chopped. 1 onion, chopped. 3 cloves garlic, minced. 2 cups chicken broth. 1 can 14 oz diced tomatoes. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: In a big pot or Dutch oven, warm up the olive oil over medium-high heat. After adding the pork cubes, cook them for about five minutes on all sides. After taking the pork out of the pot, set it aside. Add chopped celery, carrots, and onions to the same pot. Cook until they begin to soften, about 5 minutes. Saute the minced garlic for an extra minute after adding it. Put back into the pot the browned pork. Add the chopped tomatoes with their juice and the chicken broth. Add the dried thyme and rosemary, and taste and adjust the seasoning with salt and pepper. Once the stew reaches a boiling point, lower the heat to a simmer, cover, and let the pork cook for one and a half to two hours, or until it is tender and thoroughly cooked. Enjoy while hot!
