Shaking my head when we discuss corn as a cash crop, to show I understand and disapprove of its place in agrarian monoculture, the habitat destruction required of such gross over-production, and its use as a source of refined sugar additive. Smiling when I eat corn because it is beautiful and delicious. Smiling because I recognize and respect the work of centuries of Mesoamerican food scientists to turn humble grass seeds into such a versatile jewel of a crop. Smiling because maize is just as nutritious and wholesome as any other staple grain and deserves to be cherished.
