Ülkemdeki lokantaları uluslararası lokantalarla kıyaslıyor, referans noktası olarak dünyadaki iyi yerleri baz alıyorum. Balık lokantaları açısından dünyanın çok gerisindeyiz. Steakhouse’lara bakarsanız, et kalitesi ve pişirme teknikleri en iyimser deyimle ortalama. Bu açığı abartılı şovlarla kapatmaya çalışıyoruz. Esnaf lokantaları için genelleme yapmak zor, hem uzmanlığım değil hem de standartları yok. Fine dining alanında, birkaç restoranımız var ama iyileri bir elin parmaklarını geçmez. Peki @gastrogezgin Türkiye’de neleri beğenir derseniz genel anlamda baktığımda Kebapçılar ve meyhaneler dışında fark yaratan yer bulmak bence çok zor. Buralara kadar gelmişken Antwerp’in en eski restoranını ziyaret etmeden eve dönmek olmazdı. Asırlık Restaurant De Rooden Hoed tecrübenin ve geleneğin ne kadar önemli olduğunu bir kez daha hatırlattı bize. Benim gibi kabuklu deniz ürünlerine bayılan birini bile mest etmeyi başardı.
