Ingredients: 2 cups cooked rice. 1 cup diced green chilies. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped cilantro. 1/4 cup diced onion. 1 teaspoon garlic powder. 1/2 teaspoon ground cumin. Salt and pepper to taste.
Instructions: Preheat the oven to 350F 175C. In a large mixing bowl, combine cooked rice, diced green chilies, shredded cheddar cheese, sour cream, chopped cilantro, diced onion, garlic powder, ground cumin, salt, and pepper. Transfer the mixture into a greased casserole dish. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. Serve hot, garnished with additional cilantro if desired.
