Ingredients: 1 cup frozen edamame, thawed. 1 cup frozen sweet peas, thawed. 1/4 cup fresh basil leaves. 2 cloves garlic, minced. 3 tablespoons tahini. 2 tablespoons lemon juice. 2 tablespoons olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste. Water as needed for desired consistency.
Instructions: In a food processor, combine the thawed edamame, sweet peas, basil leaves, and minced garlic. Pulse until the mixture becomes a coarse paste. Add tahini, lemon juice, olive oil, ground cumin, salt, and pepper to the food processor. Continue to blend until the hummus is smooth and creamy. If it's too thick, add water gradually until you reach your desired consistency. Taste and adjust the seasoning as needed, adding more salt, pepper, or lemon juice if desired. Transfer the edamame and sweet pea hummus to a serving bowl. Drizzle with a bit of olive oil and garnish with extra basil leaves if desired.
