With the tangy lemon and salty Parmesan cheese, these salmon burgers are full of fresh flavors. The green onion mayo gives the salmon a creamy and slightly sour kick that goes well with it. A great choice for a burger with seafood!
Ingredients: 1 pound fresh salmon fillet, skin removed, diced into small pieces. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 2 cloves garlic, minced. 1 lemon, zest and juice. 1 egg, beaten. Salt and pepper to taste. 4 burger buns. 1/2 cup mayonnaise. 2 green onions, finely chopped. Lettuce leaves for garnish. Sliced tomatoes for garnish.
Instructions: In a food processor, pulse the salmon until finely chopped, but not pureed. Transfer the chopped salmon to a bowl and add breadcrumbs, Parmesan cheese, minced garlic, lemon zest, lemon juice, beaten egg, salt, and pepper. Mix well to combine. Divide the mixture into 4 equal portions and shape them into burger patties. Heat a grill or grill pan over medium-high heat. Grill the salmon burgers for about 4-5 minutes per side, or until cooked through and nicely charred on the outside. While the burgers are cooking, mix mayonnaise and chopped green onions in a small bowl to make the green onion mayo. Toast the burger buns on the grill for a minute or until they are lightly browned. Spread a generous amount of green onion mayo on the bottom half of each bun. Place a salmon burger on top of the mayo, followed by lettuce leaves and sliced tomatoes.
