This Ratatouille Grilled Cheese sandwich recipe will help you make better grilled cheese. It's grilled to perfection between two slices of bread and full of roasted vegetables and gooey mozzarella cheese.
Ingredients: 1/2 cup diced eggplant. 1/2 cup diced zucchini. 1/2 cup diced bell peppers. 1/4 cup diced onion. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper, to taste. 4 slices bread. 4 slices mozzarella cheese. 2 tablespoons butter, softened.
Instructions: Get the oven ready by heating it up to 400F 200C. Put bell peppers, onion, garlic, olive oil, salt, and pepper in a baking dish. Then add the eggplant and zucchini. Roast the vegetables in an oven that has been heated up for 20 to 25 minutes, or until they are soft. Smooth out some soft butter on one side of every piece of bread. On the side of each slice of bread that hasn't been buttered, put a slice of mozzarella cheese. Put a lot of the roasted ratatouille vegetables on top of two slices of bread. Place the last two slices of bread on top of each sandwich, cheese side down. Place the pan on medium heat. Put the sandwiches in the pan and cook for three to four minutes on each side, until the bread is golden brown and the cheese melts. Now cut the sandwiches in half and serve them hot.
