Ask any parent and they will tell you how hard it is to get their kids to eat fruit and vegetables. I speak from experience. Recently the American Heart Association recommended ways to make eating fruits and vegetables more appealing for children. They recommend roasting vegetables at high temperatures to caramelize them and therefore make them naturally sweeter. Just a few weeks ago my sister suggested that I buy a grilling basket for my barbecue.A grilling basket is great for roasting vegetables on the grill. Personally, I love eating vegetables with all of my meals so this is a simple way to cook vegetables when you barbecue. I was doing this before but I was losing a lot of vegetables in the process. Now I simply add vegetables to my grilling basket, add some olive oil and salt, and throw the grilling basket on the grill and cook for 15 to 20 minutes. This renders an awesome barbecue flavor (with grill marks) and get caramelized with roasting.I have roasted mushrooms, onions, zucchini, lemon, cherry tomatoes, green beans, pineapple, and asparagus. As my sister said, I wish I had gotten this grilling basket long ago.
