These Grilled Veggie Skewers are a colorful and flavorful addition to your BBQ. Packed with vitamins and minerals, they make a healthy side dish for any cookout.
Ingredients: 1 zucchini, sliced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 red onion, cut into chunks. 8 cherry tomatoes. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Mix the vegetables with garlic powder, oregano, salt, and pepper in a bowl. Alternate the types of vegetables as you thread them onto the skewers. For 10 to 12 minutes, turning the skewers every so often, grill until the vegetables are charred and soft. Take it off the grill and serve it hot.
