These Grilled Chicken Tacos with Guacamole are a delicious and healthy meal option. The grilled chicken is flavorful and juicy, and when combined with the creamy guacamole, crunchy lettuce slaw, and tangy Cotija cheese, it creates a perfect balance of flavors and textures. These tacos are quick and easy to make, making them ideal for a weeknight dinner or a weekend barbecue.
Ingredients: 2 boneless, skinless chicken breasts. 1 tablespoon olive oil. Salt and pepper to taste. 8 small flour tortillas. 1 cup shredded lettuce. 1/2 cup sliced red cabbage. 1/2 cup chopped fresh cilantro. 1/2 cup crumbled Cotija cheese. 1 avocado, peeled, pitted, and diced.
Instructions: Warm the grill up to a medium-high level. Add salt and pepper to the chicken breasts and brush them with olive oil. Cook the chicken on the grill for 6 to 8 minutes on each side, or until it's done and the juices run clear. Take it off the grill and let it rest for a few minutes. Then cut it into thin strips. Warm the flour tortillas on the grill for about 30 seconds on each side while the chicken rests. Shred the lettuce, slice the red cabbage, and chop the cilantro. Put the ingredients for the lettuce slaw in a bowl. Put the diced avocado in a different bowl and mash it up. Add salt and pepper to taste. Put some warmed tortillas on a plate and add a spoonful of guacamole to each one. Then add grilled chicken strips, lettuce slaw, and crumbled Cotija cheese. Serve right away, and if you want, top with extra cilantro.
