Pumpkin-Apple Cake [Testing Recipe]

Ingredients

1/2 Cup Room Temperature Butter

1/2 Cup Brown Sugar

1/2 Cup White Sugar

2 Eggs

1/4 tsp Vanilla 

1 tsp Pumpkin Spice

1 tsp Baking powder

1/4 tsp Salt

1 1/4 Cup Flour

2/3 Cup Pumpkin Puree

1 1/2 cup of shredded apples, with juices

Recipe 

1. Preheat oven to 350*F / 175 *C. Spray/Rub down a 9″ baking pan of choice with oil.

2. With a hand or stand mixer, combine the butter, brown sugar, and white sugar until combined. Incorporate the eggs, one at a time. Once homogenous, add in vanilla, pumpkin spice, baking powder and salt. Using a sieve, mixing in shifted flour - doing so in 1/3 cup segments allows for a better time. Add pumpkin puree and mix. Fold in shredded apples with their juices. Pour carefully into baking pan.

3. Bake for 40 - 50 minutes, checking after the 35 minutes if a toothpick comes out clean and the top has a brown crust.

Started this shawl today. It’s a part of a bunch of winter holiday presents I’m making. Below are some of the ones I’ve finished, and they’re just awaiting conditioner and blocking.

Still have a 6ft scarf, a two-tone cowl, two pairs of slippers, and some fingerless gloves to start on.
