Yeah it's Sunday which means baking and meal prepping.... normally. This week it's upcycling leftovers and for the first time since New Years I've actually baked. . Banana and Nut Cake 2 Ways There's always leftover bananas at ours and in general half a jar of nuts of some description. Having to cook Gluten Free and Vegan I had to get creative this time. The mix had to be good enough that the boys would eat it as well and it wouldn't notice, and I had to want to go at it happily too!!! . I started with vegan butter and soft brown sugar, creamed it in the mixer with a ballon whisk attachment, until it doubled in size and added 6 bananas, hazelnut milk, teff flour, baking powder and coconut powder with ground mixed nuts added next and it was ready to go. . Thing was there was so much mix in the end I had to add the last third of it into another dish. But I really didn't want to have 2 of exactly the same cake about so I thought I'd add a mix of cocoa, brown sugar and butter melted together with hot water in top of the second dish. Nothing better on a cold winters day than a self saucing pudding. . An hour and a half later in a slow oven. The cake needed longer but the pudding was perfect. Ok so the sauce soaked into the pudding, but you know what ... I don't care. .
