Ingredients: 1 ripe avocado. 1/4 cup unsweetened cocoa powder. 1/4 cup coconut cream. 2-4 tablespoons keto sweetener like erythritol or stevia, to taste. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: In a food processor, blend the avocado, cocoa powder, coconut cream, sweetener, vanilla extract, and salt until smooth and creamy. Taste and adjust sweetener as needed. Refrigerate for at least 30 minutes before serving to allow the pudding to set. Serve chilled, optionally topped with coconut whipped cream and grated dark chocolate.
