These Mushroom Quinoa Burgers are a delicious vegetarian option with a savory umami flavor. The roasted garlic and thyme mayonnaise add a creamy and aromatic touch to these satisfying burgers.
Ingredients: 1 cup cooked quinoa. 1 1/2 cups chopped mushrooms. 1/2 cup finely chopped onion. 2 cloves garlic, minced. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1 egg. 1 tsp dried thyme. Salt and pepper to taste. 1/4 cup mayonnaise. 1 head garlic, roasted. 1 tsp fresh thyme leaves. 4 burger buns. Lettuce, tomato, and other toppings of your choice.
Instructions: Place the mushrooms and onions in a pan and add a little olive oil. Cook for about 7 to 8 minutes, or until the mushrooms are soft and the oil has evaporated. After you add the minced garlic, cook for one more minute. Take it off the heat and let it cool down. Put the cooked quinoa, the mushroom mixture, the breadcrumbs, the egg, the dried thyme, salt, and pepper in a large bowl. Mix the ingredients together well until they are all mixed in. Take the mixture and shape it into four burger patties. Then, put them on a baking sheet that has been lined with parchment paper. Put it in the fridge for at least 30 minutes to make it firm. Make the roasted garlic and thyme mayonnaise while the patties are in the fridge. Take the roasted garlic cloves out of the head and mash them in a small bowl. Add the mayonnaise and fresh thyme leaves to the mashed garlic as you mix it. Put away. Warm up your grill or grill pan on the stove by setting it on medium-high heat. Put the burger patties on the grill and brush them with olive oil. Cook them for four to five minutes on each side, or until they are nicely browned and done all the way through. For a minute or two, toast the burger buns on the grill until they get a little brown. Spread a lot of roasted garlic and thyme mayonnaise on the bottom bun before putting the burgers together. Add the quinoa mushroom patty first, then the lettuce, tomato, and any other toppings you want. Put the other half of the bun on top. Your Mushroom Quinoa Burgers will taste great when they're hot.
