There aren't very many fics for this pairing. I gather the original creators haven't encouraged slash fic generally so that may be part of it. But considering the suggestive content of the show there is enough to spark a good blaze. I scoured the internet and found the following works. I wish there were more so I better get cracking and write my own. Until then, here are some real gems. I believe you have to be logged in to see most AO3 links. Commencement (PDF) by Astrinde: Drabble. About 7k "Two related ficlets, depicting how the Sheriff met Gisburne and what happened after."
Devoir (AO3) + PDF link by Astrinde: Who is dreaming of who? Guy or the Sheriff? - Not explicit. 800-word one-shot.
Entangled (PDF) by Astrinde: 3k+ words. The Sheriff pits a capable Nottingham guardsman against the traitorous Sir Guy. Smut but not with Guy. Still great.
Falling (AO3) by LucyLovecraft: Restricted. Explicit. 5k+ Probably my favorite. Hate sex with feelings.
The Inquiry (AO3) + PDF link by Astrinde: 5k+ words. One-shot. Somewhat explicit. When Guy returns to Nottingham Castle after the affair in Elsdon, the Sheriff is determined to uncover the truth of the matter. The author adds: "Aim and Arrow, Devoir, Severance, and Ad Valorem — in that order — are sequels to this."
Lingering (PDF) by Astrinde: Ficlet. "Gisburne discovers that discretion may be the better part of valour, but certainly not of ardour."
No One Else (AO3) by LucyLovecraft: Restricted. 3k+ words. Explicit. "After his deposition by Philip Mark and subsequent restoration, Robert de Rainault has a score to settle with his protégé. Set after the episode 'The Sheriff of Nottingham'."
Severance (AO3) + PDF link by Astrinde: 18k+ words. Mature. "This story is narrated by the unfortunate Sir Guy of Gisburne during season 3; it begins about twenty minutes into The Sheriff of Nottingham and ends with the end of The Pretender. What didn't we see during Philip Mark's brief term as Sheriff? And what ties Guy to Nottingham Castle, though he defies and flees his servitude again and again?"

Love how Abbot Hugo is about one breath away from saying "you imprisoned my brother's boyfriend?!" when Prince John says Guy is in the dungeon.
One of the final scenes between the Sheriff and Guy. Totally bonkers last episode. Great exchanges between these two though.

"And kept it from Gisburne?"
"I know his hand, my lord."
"Yes, Captain. So do I."
