Tip: entertainment card accepted here, aud40 off the total bill. I'm not too sure where the Geraldton wax is - could it be the paper-thin cucumber-like slices in the middle? Amuse bouche: cheese puff, chicken and chilli jam, beetroot and ginger, sesame and caraway at Restaurant Amuse, East Perth. The degustation menu is aud130 per person - there is also aud40 off the total bill with the entertainment card which we made use of. The cheese puffs were divine. Enjoyed it during my first visit too - seems like a permanent fixture on their menu and rightly so. The chicken skin with kumquat peel and chilli jam was a tiny bit like 'bak kwa' (barbecue pork jerky).
