A hearty and comforting soup made with dried navy beans and flavorful ham, cooked low and slow in a crock pot.

Instructions: Rinse and sort through the dried navy beans, removing any debris. In a slow cooker, combine navy beans, ham hock or bone, chopped onion, minced garlic, diced carrots, diced celery, chicken broth, bay leaf, salt, and pepper. Cover and cook on low for 8-10 hours or high for 4-6 hours, or until beans are tender and soup is flavorful. Once cooked, remove the ham hock or bone from the soup. Ingredients: 1 lb dried navy beans, rinsed and sorted. 1 ham hock or ham bone. 1 onion, finely chopped. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 6 cups chicken broth. 1 teaspoon dried thyme. 1 bay leaf. Salt and pepper to taste.
