Banana cake

3 large eggs, room temp 100g caster sugar --> 50ml 3 lrg ripe bananas, mashed 150g cake flour --> 120 AP, 30 corn starch 1/2 tsp baking powder 1/4 tsp baking soda 80ml vegetable oil --> 60ml 20ml milk --> 30ml soy milk 1 tsp vanilla extract 1. Line round pan 2. Sieve together flour, powder, soda. 3. Put oil, milk, vanilla in bowl. 4. Put eggs, sugar, bananas in mixing bowl. mix on med till thick, pale and triple the volume (7-8 min). should leave a ribbon - draw an '8', should stay a few seconds. beat low for another 1-2 min to stabilise air bubbles in the batter - do not overmix (not good if the '8' doesn't disappear). 5. Add sieved flour in 3 additions. each time, fold with spatula. 6. Drizzle in milk/oil/vanilla. 7. Fold with spatula, then mix on low speed for 20 seconds till combined. (meant to fold only, but my flour was lumping up) 8. Pour into pan (should be 3/4 full). 9. Bake in oven preheated to 160C for 40-45 min until surface golden brown and toothpick in centre comes out clean. remove from oven, unmold, leave to cool inverted on rack. NOTES:
Next time increase temp to 180 halfway thru cos lol I ended up needing to bake for an extra half hr cos the middle was still wet. Covered with foil after like 30 min though as it was browning.
Sunk so the bottom third is dense sigh. Very moist and spongy. Good banana flavour. Sugar could be reduced - 45ml?
