Vegan Haupia (Coconut) Pudding with Fresh Fruit

I made Haupia (“How-pia”) this afternoon. It’s chilling/setting in the fridge now. I grew up in Honolulu so I’m excited to have it here in Austin 🥥🌺

Chocolate Haupia Pie

Notes:

traditional Hawaiian dessert that is super easy to make

much like coconut jelly and best served cold

Ingredients:

3/4 cup water

5 Tbsp cornstarch

1/4 cup granulated sugar

1 can (about 13 oz.) coconut milk

Special Equipment Needed:

8x8 pan (looks like a brownie pan)

Instructions:

In a medium sized mixing bowl, mix water, cornstarch, and sugar until well combined. (NOT THE COCONUT MILK) Set aside for later.

Add the coconut milk to a medium sized pot over medium to high heat. Stir frequently so the milk does not burn. Heat until the liquid just barely starts to bubble.

Pour the cornstarch mixture into the pot and stir in with the coconut milk. Keep stirring until the mixture reaches a consistency that is like pudding. Immediately remove from heat once getting to that point.

Grease the 8x8 pan and pour the mixture from the pot into the greased pan. Allow the haupia mix to cool, then place in the fridge for several hours. (At least 3) It can also be left overnight.

Once it is done, cut into squares and enjoy!
