Strawberry mousse with hazelnut dacquoise biscuits from the Favorite Flavors Great British Baking Show cookbook. The nutty dacquoise is quick and a good balance with the strawberry mousse. It was an easy kid crowd pleaser instead of a big birthday cake. It was not very difficult, but by the time of the biscuits and mousse I used up most of my bowl and had to keep washing whisks. The mousse is not just cream, but egg whites too, so it’s not as heavy. The build unit is also also very puffy and light but with a crunch.with the gelatin the mousse set very nicely.
