Ingredients: 1 cup quinoa, cooked. 1 cup pumpkin puree. 1/2 cup hazelnuts, chopped. 1/4 cup parmesan cheese, grated. 1/4 cup breadcrumbs. 1 egg. Salt and pepper to taste. Olive oil for cooking.
Instructions: In a large bowl, combine cooked quinoa, pumpkin puree, chopped hazelnuts, grated parmesan cheese, breadcrumbs, and beaten egg. Season the mixture with salt and pepper to taste. Mix until well-combined. Form the mixture into small gnocchi shapes using your hands. Heat olive oil in a pan over medium heat.
