These stuffed breadsticks are a tasty low-carb alternative to regular breadsticks that are also keto-friendly. They are a tasty snack or appetizer because they are filled with pepperoni, black olives, and gooey cheese.
Ingredients: 1 1/2 cups almond flour. 2 tsp baking powder. 1/2 tsp garlic powder. 1/4 tsp salt. 1 1/2 cups shredded mozzarella cheese. 2 oz cream cheese. 1 large egg. 1/4 cup grated Parmesan cheese. 1/2 cup marinara sauce sugar-free for keto. 4 oz pepperoni slices. 1/4 cup sliced black olives.
Instructions: Preheat oven to 400F 200C. In a microwave-safe bowl, combine almond flour, baking powder, garlic powder, and salt. Add mozzarella cheese and cream cheese to the bowl. Microwave on high for 1 minute. Stir the cheese mixture until well combined, then add the egg and mix until a dough forms. Divide the dough into 8 equal portions. Roll each portion into a breadstick shape. Place a line of pepperoni slices and a few slices of black olives along the center of each breadstick. Roll the dough around the filling and seal the edges. Arrange the stuffed breadsticks on a baking sheet lined with parchment paper. Sprinkle grated Parmesan cheese over the top. Bake in the preheated oven for 12-15 minutes, or until golden brown. Serve warm with marinara sauce for dipping.
