This is a tasty, low-carb casserole that tastes like a cheeseburger and is easy to make. Great for people on the keto diet.
Ingredients: 1 lb ground beef. 1/2 onion, diced. 2 cloves garlic, minced. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1 cup shredded mozzarella cheese. 4 large eggs. 1/2 cup heavy cream. 1 tablespoon mustard. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C. In a skillet, brown ground beef with diced onions and minced garlic. Drain excess fat. Stir in diced tomatoes and cook until heated through. Transfer the beef mixture into a greased casserole dish. In a bowl, whisk together eggs, heavy cream, mustard, salt, and pepper. Pour the egg mixture over the beef in the casserole dish. Sprinkle shredded cheddar and mozzarella cheese on top. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly. Let it cool slightly before serving.
