Ingredients: 4 large bell peppers, halved and seeded. 2 cups cooked rice use gluten-free rice. 1 cup cooked and shredded chicken breast. 1 cup steamed broccoli florets, chopped. 1 cup shredded cheddar cheese ensure it's gluten-free. 1/2 cup gluten-free chicken broth. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Preheat the oven to 375F 190C. In a large bowl, combine cooked rice, shredded chicken, chopped broccoli, 1/2 cup shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Place halved bell peppers in a baking dish, cut side up. Stuff each pepper half with the rice mixture, pressing down gently to pack it in. Pour chicken broth into the bottom of the baking dish around the peppers. Cover the dish with aluminum foil and bake for 25-30 minutes, or until peppers are tender. Remove the foil, sprinkle remaining cheddar cheese over the stuffed peppers, and bake uncovered for an additional 5 minutes, or until the cheese is melted and bubbly.
