Black Friday

We all know the madness about the day after Thanksgiving. Big shoppers prepare a long time for it, others try to find the best sale that day, in stores or online. But do you know what´s the history behind the name of this beloved bargain day?

It is not that cheerful as how we know the day now. ´Black Friday´ started in Philadelphia in 50s. Philadelphian policemen used these words for the post-Thanksgiving day for it´s mess and chaos caused by crowds coming to city center a day before Army-Navy football game played that Saturday. There was a lot of traffic and every place was overcrowded. Also it was a perfect day for shoplifters to steal and loot. So for Philly officers it was a really Black Friday.

The term spread nationally very quickly. The day became a big day for all retailers and nowadays is this American tradition leaking internationally. And is expanded from 1 to 4 days. I am glad today we only remember the nice thing about this day.

Doneness levels

The doneness level is a level of how the steak is cooked through. That is very important for color, temperature, structure and most likely for the taste. The time of preparation each level depends on various quality and height of the meat and temperature of grill.

Raw and Blue

Raw steak is what it sounds like. The meat is completely raw. This type of steak is not sold in one piece. It is usually sold in the form of tartare or carpaccio.

Blue steak is seared lightly on the outside but completely red inside. This type of steak is not very juicy and hard to chew.

Rare

Rare steak is seasoned and seared but it is red of 75% inside. There needs to be a brief rest after it´s done for the steak to be juicy. This is one of the most loved doneness levels. The temperature of center should be 123.8 °F.

Medium rare

Medium rare is a little bit more done than rare. 50% of the inside should be red, but it is still very juicy and tender as the one before. The surface of steak is brown. Center temperature is between 129.2 and 132.8 °F.

Medium

Brown outside, pink by 25% inside with central temperature of 141.8 °F. To be juicy, medium steak needs few minutes of rest. But it is a little harder to cut and chew.

Well done

This one is brown all the way through, very tough and not so juicy. Center temperature is 158 °F. The majority of steak lovers would say this is wasting of the meat.

The Difference

Did you even know there is a difference between grilling and barbecue? Yes, there is, despite people exchange these two words sometimes.

Grilling is a way of meat preparation, where the meat is grilled over very high heat and over direct fire for a little while.

At barbecue, on the other side, the meat is prepared in the smoke for a longer time. The meat is usually not sliced and if marinated, then not in salt. The meat would be too dry if there would be salt in the marinade.  And there is one more inseparable part of barbecue – sauces and dips.

Rolled&grilled pork loin  medallions

You will need: - 4 strips of pork tenderloin - 2 tbsp. melted butter - 2 tbsp. oil - 4 tbsp. salt - 2 cloves garlic, minced - 2 tbsp. chopped chives - 2 tbsp. chopped rosemary - 2 tbsp. dried oregano - a little bit of freshly grated nutmeg

- and some skewers. 

At first, mix properly all the ingredients except for the meat in a small bowl. Than roll your tenderloin strips onto your skewers to form a spiral and spread the marinade all over. Let it marinate for at least 1 hour. Set your medallions over the fire and let them grill them for about 4 minutes per one side. Leave them rest for 2 minutes before serving.
