Thanks to @hemplerfoods I’m gonna be doing a series of bacon recipes for the coming weeks! 🥓🥓🥓 I thought I’d start with a classic by making a BLT with a twist: homemade focaccia BLTAE (bacon, lettuce, tomato, avo and egg) yup... Red Cabbage -Classic German dish

1 head red cabbage, sliced thin as for Cole Slaw

1 onion sliced

1 to 2 tart apples, cored and sliced

1 quart water 

1 bay leaf

salt and pepper to taste

1/3 stick butter

2 Hempler bacon slices

1/2 cup apple cider vinegar or red wine vinegar

1/2 sugar

2 cloves

juice 1/2 lemon

2 or 3 tablespoons flour

  Wash and drain cabbage.  Wash and peel apples, core and cut into small pieces.  Heat 2 tablespoons fat in large

saucepan and sauté onion and apple 3 or 4 minutes.   Add water, vinegar, sugar, salt, pepper, cloves, bay leaf, and

lemon juice.  Bring to a boil.  Add cabbage.  Cover, let simmer 45 to 60 minutes, or until tender.  Just before serving

sprinkle flour on top to absorb liquid.  Serves 4.

  Red cabbage is still served at every Hempler family gathering.  My dad and his sister have their own version of the way Oma made it.  Most of the time we get both at our family gatherings ...more for me.

Apfelpfannkuchen  (Apple Pancakes)

1 cup sifted flour all purpose

1 Tb. sugar

1/4 teaspoon salt

2 eggs, beaten

1 cup milk

8 Tb. butter

3 tart firm apples, peeled and sliced

Pinch of nutmeg

Cinnamon and sugar mixture

  Combine flour, sugar, salt in bowl.  Make a well in center, add eggs and milk, beat until

batter is smooth.  Let stand while cooking apples.

Place 3 Tb. butter in skillet, sauté the apple slices in butter until brown and tender.  remove

sprinkle with cinnamon and sugar mixture.

  In an omelet pan or crepe pan, melt remaining butter, add the thin batter for one pancake

at a time, cook until lightly browned on one side, turnover, add apple mixture on top, roll up and add confectioner's sugar while warm.

  Makes 12 pancakes.  Can serve with sour cream or whipped cream. 

  I have fond memories of my Oma (grandma) making apple pancakes for us when we'd spend the night with her.  She'd  make home made whipping cream to go on top.  One of my favorite breakfast dishes.
