Ingredients: 1 10-12 lb prime rib roast. 1/2 cup unsalted butter, softened. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, finely chopped. 2 tablespoons fresh thyme, finely chopped. Salt and pepper to taste. Wood chips for smoking.
Instructions: Set the temperature of your smoker to 225F 107C. To make the herb butter, combine softened butter, minced garlic, chopped thyme, chopped rosemary, and salt and pepper in a bowl. Apply a thick layer of the herb butter mixture to the whole prime rib. After positioning the prime rib fat side up on the smoker rack, pierce the thickest part of the roast with a meat thermometer. To add a hint of smoke, add wood chips to the smoker. Smoke the prime rib until the internal temperature reaches the doneness you desire, which is typically medium-rare at 135 degrees Fahrenheit or 57 degrees Celsius. Before slicing, let the prime rib rest for fifteen to twenty minutes. With a tasteful blend of herbs and smoke, cut and serve the Herb Butter Smoked Prime Rib.
