Mixed lentils and flavorful turnip greens, mixed with aromatic spices, make this hearty and healthy vegan dish.
Ingredients: 1 cup mixed lentils red lentils, green lentils, split chickpeas. 2 cups chopped turnip greens. 1 onion, finely chopped. 2 tomatoes, chopped. 3 cloves garlic, minced. 1-inch ginger, grated. 1 green chili, chopped. 1 teaspoon cumin seeds. 1 teaspoon turmeric powder. 1 teaspoon coriander powder. 1 teaspoon garam masala. Salt to taste. 2 tablespoons oil. 4 cups water.
Instructions: Soak the lentils in water for 30 minutes after giving them a good rinse. Put oil in a large pot or pressure cooker and heat it up. Put in the cumin seeds and let them pop. Add green chili, garlic, ginger, and onion that has been chopped. Cook the onions until they become clear. Put in the chopped tomatoes and cook them until they get really soft. Put in the salt, turmeric powder, and coriander powder now. Mix well. After letting the lentils soak, drain them and add them to the pot. Mix it for a few minutes. Mix in the chopped turnip greens. Add water to the pressure cooker and then shut the lid. For about 30 to 35 minutes, or until the lentils are soft, cook for three to four whistles or in a pot. Open the lid when the pressure goes away on its own. Add the garam masala and mix it in slowly. If you need to, add more water to change the consistency. Warm it up and serve it with bread or rice.
