Ingredients: 4 pork chops. 2 tablespoons olive oil. 2 tablespoons Dijon mustard. 1 cup breadcrumbs. 1 tablespoon fresh thyme, chopped. 1 tablespoon fresh rosemary, chopped. . 1 pound baby potatoes, halved. 2 tablespoons butter. 1 pound mushrooms, sliced. 2 cloves garlic, minced. 1 cup chicken broth. 1/2 cup heavy cream. 2 tablespoons fresh parsley, chopped.
Instructions: Turn on the oven and heat it up to 400F 200C. Melt the butter in a saucepan over low heat. Add the breadcrumbs, chopped thyme and rosemary, salt, and black pepper. Cover each pork chop with the breadcrumb mixture and press it down so it sticks. Put the pork chops with the herb crust on a baking sheet. Bake for 20 to 25 minutes, or until the internal temperature reaches 145F 63C. Melt the butter and add salt and pepper to the baby potatoes that have been cut in half. Put them on the baking sheet with the pork chops and roast them until they are golden and crispy. Sliced mushrooms and minced garlic should be cooked in a skillet until the mushrooms are soft. Add the heavy cream and chicken broth. Simmer for 5 to 7 minutes, until the sauce gets thick. Put the pork chops with a herb crust on top of roasted potatoes and drizzle the rich mushroom sauce on top. Add some fresh parsley on top, and enjoy this fancy and tasty pork dish!
