Instructions: Sun-dried tomatoes, chicken broth, onion, garlic, basil, oregano, thyme, salt, and pepper should all be put in a slow cooker with chicken breasts. Let the chicken cook on low for 6 to 8 hours or high for 3 to 4 hours, until it is soft and fully cooked. Add baby potatoes to the slow cooker about an hour before you want to serve them. Make sure they are completely submerged in the liquid. Grate Parmesan cheese and add olive oil to a small bowl. Pour it over the potatoes and chicken. Keep cooking with the lid on for another hour or 30 minutes on high, or until the potatoes are soft. If you want, you can serve it hot with extra Parmesan cheese and fresh herbs on top.
