Ingredients: 1 cup all-purpose flour. 1/2 cup almond flour. 1/2 cup granulated sugar. 1/2 cup unsalted butter, softened. 2 large eggs. 1/2 cup white chocolate chips. 1/2 cup milk. 1 tsp almond extract. 1 tsp baking powder. 1/4 tsp salt. 6 Cadbury Creme Eggs, halved.
Instructions: Preheat your oven to 350F 175C and line a cupcake tin with paper liners. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the almond extract. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Fold in the white chocolate chips. Divide the cupcake batter evenly among the prepared liners, filling each about 2/3 full. Place half of a Cadbury Creme Egg cut side down into the center of each cupcake. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the cupcakes comes out clean. Remove from the oven and let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Once cooled, you can optionally decorate the cupcakes with melted white chocolate and additional Cadbury Creme Egg halves.
