Beetroot, carrot and apple cake. What a fabulous feast of colour. This was a gluten free cake mega high in calories with the vegetable and fruit on top of the olive oil used to make it super moist. Walnuts added texture and coconut flour gave it a light consistency instead of almond flour. I wing this recipe every time.
