This tofu walnut lentil chorizo is a flavorful and protein-packed alternative to traditional chorizo. It's perfect for adding a spicy kick to tacos, burritos, or breakfast scrambles. The combination of tofu, lentils, and walnuts provides a satisfying texture, while the spices add a depth of flavor reminiscent of traditional chorizo.
Ingredients: 200g firm tofu, crumbled. 1 cup cooked lentils. 1/2 cup chopped walnuts. 2 tbsp tomato paste. 1 tbsp soy sauce. 1 tsp smoked paprika. 1/2 tsp garlic powder. 1/2 tsp onion powder. 1/4 tsp cayenne pepper optional. Salt and pepper to taste.
Instructions: In a bowl, mix crumbled tofu, cooked lentils, chopped walnuts, tomato paste, soy sauce, smoked paprika, garlic powder, onion powder, and cayenne pepper if using. Season with salt and pepper to taste. Heat a non-stick skillet over medium heat. Add the tofu mixture to the skillet and cook for 8-10 minutes, stirring occasionally, until heated through and slightly browned. Serve hot and enjoy!
