The Kyoto Distillery is the first in Japan to be solely dedicated to making artisanal Gin. KI NO BI Gin is made using 11 botanicals sourced in its majority from the Kyoto Prefecture were the distillery is located. Another unique regional ingredient only available in Kyoto is found in its underground water source. Fushimi Spring water is renowned for its purity, softness, and mellow flavor. KI NO BI and KI NO BI TEA, the first two gins in the flight, were both elegantly smooth with classic juniper and citrus aromatics and flavors. The flagship KI NO BI is slightly fresher in its aromatics and more Yuzu forward in the palate. KI NO BI TEA delivers the similar freshness and citrusy quality, adding a layer of savory-fruity sweetness to its flavor profile. The third glass on the flight, KI NO BI Edition G, a rare and delicious treat. Edition G was aged in oak barriques sourced from the Argonne forests in Northeastern France near the Belgium border. The barrels had been previously used to mature Henri Giraud quality Champagnes in Marne, Champagne. Only 1,700 bottles of KI NO BI Edition G gin were produced to be distributed in 20 markets worldwide. A truly unique sensorial experience.
