Hindbeh / Wild Chicory blanching. It is really amazing that we can now find it grown in the UK. It is now in season so I bought a few bunches for tonight’s dinner. The chopping and washing is the only time consuming in prepping, but the final outcome is so worth it. In Marjeyoune we call it Assoura, which literally means the squeezed one, because you have to squeeze it to get rid of all the water.
